Koonunga Hill Shiraz joined the range in 2002, a contemporary reflection of Penfolds multi-regional sourcing philosophy. Shiraz from the warmer districts of South Australia is carefully blended, with the Barossa Valley always well represented. Ripe plum, blueberry & sweet spice - undeniably South Australian Shiraz. Penfolds Max's Shiraz Cabernet is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max's constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds to grow. A more approachable Penfolds style at release - ideally shelf to glass, save the cellar.

A time honoured and alternative expression of Shiraz. Matured in large old vats that impart minimal oak character. Rich and plush when young, gaining soft, earthy, mocha characters as it ages. Drink now to 2055.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Vibrant and expressive, the Pepperjack Central Otago Pinot Noir pours a brilliant scarlet with a subtle violet hue. Enticing aromas of juicy plum, dark cherry, and mocha are lifted by a hint of wild thyme, setting the stage for a richly layered palate. Bursting with dark cherry and luscious cassis, this Pinot is balanced by silky tannins and a supple mouthfeel. Savoury cocoa notes and resinous spices from oak and whole bunch fermentation add depth, drawing the red and blue fruits across the palate, melding to a complex and concentrated finish.

Aromas of ripe red currants, blackberries with hints of sage, mint and toasty oak. The palate shows subtle red fruits while having some grainy long tannins. Dual appellation - Langhorne Creek and McLaren Vale.

Pepperjack Mid strikes a balance between the art of traditional winemaking that Pepperjack is renowned for, and the science of cutting-edge de-alcoholisation and flavour retention technology. Still bursting with quintessential Pepperjack character, this mid-strength wine displays aromas of blackberries and plums with hints of pepper and spice. The palate is rich, round, and soft with concentrated berry fruits and soft velvety tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.

Perrier-Jouët Grand Brut is a melting pot of aromas and flavours - a wonderfully rounded, generous champagne whose joie de vivre makes every moment more special. A silvery gold colour, Grand Brut is a refined and balanced cuvée revealing the floral nuances of Chardonnay. Delicate floral aromas are rounded out by fresh fruit and hints of buttery brioche and vanilla. Though crisp and light on the palate, it combines freshness with a lingeringly rich, generous finish, preserving its distinctive balance and harmony to the very end.

Bright and deep red, the aroma is abundant in savoury plum, fennel seed and dark chocolate aromas. Naturally low in tannins, the wine is soft and abundant in rich dark fruits with a lovely Christmas cake-like finish. The sweetness is apparent, but balanced by the complexity of fruit-weight and time spent on tirage before disgorgement.
